Moroccan Fish

Preheat oven to 400 degrees.

Ingredients
4 - 4 oz. pieces of white fish (can be orange roughy, cod, halibut or mahi)
2 tb. olive oil
1/4 cup of cilantro, chopped (save a little for garnish)
3 cloves of garlic, minced
1 tb. tomato paste
1 tomato, chopped
1 tb. lemon juice
1/2 red bell pepper, sliced lengthwise
1/2 cup of garbanzo beans (optional)
1/2 tsp. of the following: tumeric, paprika, cumin, chili powder
salt and pepper to taste
Directions
In a large bowl, combine all the ingredients except the fish, peppers and beans.
Whisk until fully combined.
Add fish, peppers and beans and coat.
Ideally, let marinade overnight, but at a minimum for 30 minutes.
Using a large glass or metal cooking sheet, spread the fish first and coat with all the other ingredients and sauce.
Place in the oven at 400 degrees and cook for 10-15 minutes, or until fully cooked.
Remove and enjoy!
Notes
Traditionally, this dish is made with Tilapia. However, because almost all tilapia is farm-raised these days, I substitute it with any firm whitefish such as orange roughy, cod, halibut or mahi mahi.
