Moroccan Fish

Preheat oven to 400 degrees.

Ingredients

  • 4 - 4 oz. pieces of white fish (can be orange roughy, cod, halibut or mahi)

  • 2 tb. olive oil

  • 1/4 cup of cilantro, chopped (save a little for garnish)

  • 3 cloves of garlic, minced

  • 1 tb. tomato paste

  • 1 tomato, chopped

  • 1 tb. lemon juice 

  • 1/2 red bell pepper, sliced lengthwise

  • 1/2 cup of garbanzo beans (optional)

  • 1/2 tsp. of the following: tumeric, paprika, cumin, chili powder

  • salt and pepper to taste

Directions

  1. In a large bowl, combine all the ingredients except the fish, peppers and beans. 

  2. Whisk until fully combined. 

  3. Add fish, peppers and beans and coat. 

  4. Ideally, let marinade overnight, but at a minimum for 30 minutes. 

  5. Using a large glass or metal cooking sheet, spread the fish first and coat with all the other ingredients and sauce. 

  6. Place in the oven at 400 degrees and cook for 10-15 minutes, or until fully cooked. 

  7. Remove and enjoy!

Notes

Traditionally, this dish is made with Tilapia. However, because almost all tilapia is farm-raised these days, I substitute it with any firm whitefish such as orange roughy, cod, halibut or mahi mahi.
