Annie's Kale Pomegranate Salad with Honey Cider Vinaigrette

To save time: Purchase a pre-made bag of kale salad such as the Cruciferous Crunch Collection from Trader Joe's.

Ingredients

For Honey Cider Vinaigrette: 

  1. 1/8 cup olive oil

  2. 1 Tb. honey

  3. 1 Tb. lemon juice

  4. 1 Tb. apple cider vinegar

  5. salt and pepper to taste 

For Salad:

  1. 1 bag of pre-made chopped kale salad mix such as the Cruciferous Crunch Collection from Trader Joe's

  2. 1/2 cup of pomegranate seeds

  3. 1/4 cup shaved parmesan cheese (omit or replace with chicken if avoiding dairy)

  4. 1/2 avocado, chopped 

  5. 1/4 cup toasted pine nuts



Directions

  1. In a bowl, combine all dressing ingredients and whisk with a fork until fully mixed.

  2. In a large salad bowl, add all salad ingredients. 

  3. Pour dressing over salad, toss and serve!

Notes

For extra flavor, toast pine nuts in the toaster oven for 90 seconds to bring out the nuttiness and flavor.
