Avo Toast

Ingredients
1 slice of sourdough bread
½ ripe avocado
1 hard-boiled egg
1 tsp. of olive oil
1 tsp. lemon juice
1 tsp. sunflower seeds
1/4 persian cucumber
A pinch of salt, pepper and cumin
Directions
Toast your slice of bread until golden and firm. (I usually toast for 2 1/2 minutes)
Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it’s as smooth as you like it.
Boil an egg. Peel it. Mash with a fork until you have chunky pieces.
Thinly slice cucumber
Spread avocado on top of your toast. Add hard-boiled egg.
Top with oil, lemon juice, seeds, salt, pepper and cumin.
Garnish with cucumber slices.
