Avo Toast

Ingredients

  • 1 slice of sourdough bread 

  • ½ ripe avocado

  • 1 hard-boiled egg

  • 1 tsp. of olive oil

  • 1 tsp. lemon juice

  • 1 tsp. sunflower seeds

  • 1/4 persian cucumber

  • A pinch of salt, pepper and cumin

Directions

  1. Toast your slice of bread until golden and firm. (I usually toast for 2 1/2 minutes)

  2. Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it’s as smooth as you like it. 

  3. Boil an egg. Peel it. Mash with a fork until you have chunky pieces.

  4. Thinly slice cucumber

  5. Spread avocado on top of your toast. Add hard-boiled egg. 

  6. Top with oil, lemon juice, seeds, salt, pepper and cumin. 

  7. Garnish with cucumber slices.

  8. Serve and Enjoy!
