Annie's Gluten-Free Chicken Bone Broth Soup

Ingredients
5 organic chicken drumsticks
1 container of Trader Joe's mirepoix OR 1/2 cup of each of the following: onions, celery and carrots.
2 tb. olive oil
2 cups of bone broth (I use the carton of chicken bone broth from Trader Joe's)
3 cups of water
1 cup brown rice noodles
3 inch piece of ginger, peeled and cut into thirds
Optional: 1 tb. plant based broth mixture (I use Protective Diet Plant Based Broth)
salt and pepper to taste

1. Warm 2 Tb. of olive oil over medium heat a soup pot and add chicken drumsticks. Stir drumsticks occasionally for about 5 minutes,or until they begin to brown.
2. Add the mirepoix (onion, celery, and carrots) ginger and cook, stirring occasionally, until the vegetables just start to soften, 3 to 5 minutes.
3. Add salt, pepper, bone broth, water and vegetable broth powder (optional).
4. Bring to a boil, reduce the heat to low, cover, and simmer for as long as possible (I usually do 2 hours to let the collagen from the drumsticks release into the broth).
4. Move the pot off the heat and transfer the chicken to a plate with a slotted spoon. Use 2 forks to pull the meat apart into shreds. Remove and discard any bones and return shredded chicken to the pot.
5. Serve and Enjoy!
