  • 1/3 cup chia seeds

  • 1 1/2 cups almond milk 

  • 1 Tb. monkfruit maple syrup (I like the lakanto brand)

  • 1/2 Tsp. vanilla

  • 1/8 Tsp. cinnamon 

Directions

Directions 

1. Combine all the ingredients in a jar or container. Cover with a lid and give it a vigorous shake.

2. Place in the refrigerator for at least 1-2 or until milk thickens to the consistency of a pudding. 

3. Serve cold with sliced fruit and/or toasted nuts on top.

People are always asking me what are some quick easy and nutritious snacks for their kids. A chia seed pudding is so easy to make and can serve as a great snack or topped with the berries and almonds can make a fabulous breakfast. Despite their tiny size, chia seeds are packed with essential nutrients, such as omega-3 fatty acids, antioxidants, and fiber. That is why they make such a filling and nutritious addition to our diets. This recipe will literally take you five minutes to make and the kids love watching how the chia seeds expand in whatever type of milk you choose to soak them in.
