Curry Avocado Egg Salad

Ingredients
4 hard boiled eggs
1/2 of an avocado
1 tsp. of olive oil
1 tsp. of sour cream (omit if vegan or lactose intolerant)
1 stalk of celery finely chopped
1 tsp. of capers
1/2 tsp. of curry powder
Salt and pepper to taste
Directions
Place 4 eggs in boiling water and boil for about 10 minutes.
Finely chop stalk of celery.
Mash avocado with a fork.
In a bowl, combine avocado, sour cream, curry, olive oil and salt and pepper. Add celery and capers and mix together.
After eggs have boiled, remove shell and with a fork mash them into small pieces.
Combine eggs and avocado mixture for a healthy and flavorful take on a traditional egg salad.
