Curry Avocado Egg Salad

Ingredients

  • 4 hard boiled eggs

  • 1/2 of an avocado

  • 1 tsp. of olive oil

  • 1 tsp. of sour cream (omit if vegan or lactose intolerant)

  • 1 stalk of celery finely chopped

  • 1 tsp. of capers

  • 1/2 tsp. of curry powder

  • Salt and pepper to taste 

Directions

  1. Place 4 eggs in boiling water and boil for about 10 minutes. 

  2. Finely chop stalk of celery. 

  3. Mash avocado with a fork.

  4. In a bowl, combine avocado, sour cream, curry, olive oil and salt and pepper. Add celery and capers and mix together. 

  5. After eggs have boiled, remove shell and with a fork mash them into small pieces. 

  6. Combine eggs and avocado mixture for a healthy and flavorful take on a traditional egg salad.
