Israeli Salad

Ingredients

  • 6 persian cucumbers

  • 1 large tomato 

  • 1 bunch of cilantro

  • 1/4 red onion 

  • 1 yellow bell pepper

  • 2 Tb. olive oil

  • 1 Tb. lemon juice 

  • salt and pepper to taste 

Directions

  1. Chop all ingredients finely. 

  2. Add olive oil, lemon juice, salt and pepper. 

  3. Toss and Serve!

Notes

To make this a full meal, I like to toast a whole wheat pita, spread it with a tablespoon of hummus and top with Israeli salad.
