Easy Roasted Citrus Honey Chicken with Yams

My clients are always asking me for easy whole food based recipes that they can prep in 10 minutes. This recipe is a variation of one that I grew up with and only needs seven ingredient and is completely clean. I like to think of it as a healthier take on sweet-and-sour chicken because it incorporates elements of citrus which are high in vitamin C and raw honey which is filled with antioxidants. I often find myself making this recipe on a weekday when time is limited and we’re all starving!

Ingredients
8 organic chicken thighs or drumsticks
3 cups yams (peeled and cubed into 1-2 cubed)
1 onion (sliced lengthwise)
1 Tb. of raw honey
1 Tb. of tumeric
1 whole orange (fresh squeezed)
1/3 cup of olive oil
salt and pepper to taste
Directions
Preheat oven to 400°.
In a large glass cooking tray, spread chicken, yams and sliced onion.
In a small bowl whisk together the oil, honey, tumeric, the juice from the orange and salt and pepper.
Pour over the chicken, sweet potato and onion mixture and toss together until evenly coated.
Roast in the oven on 400° for one hour, opening up the oven and mixing the ingredients together every 15 to 20 minutes.
Serve and enjoy!
