Mexican Chopped Salad with Creamy Cilantro Dressing

Ingredients

Salad:

  • I head of romaine lettuce - chopped

  • 1/2 corn on the cob - chopped

  • 1/4 cup black beans

  • 1/4 cup pico de gallo

  • 5 black bean tortilla chipped, broken 

  • 1/4 mango - chopped

Creamy Cilantro Dressing: (For a Mason Jar size of Dressing)

  • 1 cup cashews, soaked overnigh

  • 2 bunches cilantro

  • 1/2 cup water

  • 1/4 cup lime juice

  • 1/8 cup apple cider vinegar

  • 2 cloves of garlic

  • 1/4 cup EVOO

  • 1 tsp. monkfruit sugar

  • 2 tb. coconut aminos

  • 2 tb. nutritional yeast

Blend ingredients on high and serve. Lasts up to a week.
