Summer Berry Salad with Tumeric Chicken

Yesterday, we took our kids to the local farmers market and I was blown away by all the variety of fruits and vegetables we had available this season. Summer is of course the best season for fruit, especially berries, and I could not resist getting some fresh strawberries and blackberries that inspired today’s salad. Using spinach as my green and topping the salad with a tumeric infused chicken breast, fresh avocado and feta cheese this salad hits every tastebud you can imagine and is light and refreshing.

Ingredients

Tumeric Chicken

  • 4 ounce chicken breast

  • 1/8 tsp. tumeric

  • 1 tsp. garlic paste

  • 1 tsp. olive oil

  • salt and pepper to taste

Aged Balsamic Vinaigrette

  • 1 tb. olive oil

  • 1 tsp. aged balsamic vinegar

  • 1 tb. water

  • 1 tsp. lemon juice

Salad

  • 1 cup of spinach, coarsely chopped

  • 1 tb. fat free feta cheese

  • 1/4 avocado

  • 3 strawberries, sliced

  • 5 blackberries

Directions

Tumeric Chicken

  1. In a non-stick pan, drizzle the olive oil and heat on medium for a minute.

  2. Add the chicken breast and drizzle with tumeric, garlic paste, salt and pepper.

  3. Saute for 3 minutes on each side or until fully cooked.

Aged Balsamic Vinaigrette

Whisk ingredients together in a bowl.

Salad

In a large salad bowl, add spinach, berries, avocado and feta. Top with chopped chicken and toss with vinaigrette.
