Sweet and Spicy Mixed Nuts

Last week I hosted book club at my house and wanted to try out some new recipes on the girls. I am a huge fan of bar nuts and rosemary so I wanted to make a healthy, herby, sweet and spicy version of them. Mixed nuts are a great snack because they are full of omega-3 fatty acids and keep you full. This recipe is super easy to make and the best part of it is when you take it out of the oven your whole house smells like heaven.

Ingredients

  • 1 pound of mixed unsalted nuts

  • 2 Tb. of olive oil

  • 2 Tb. chopped rosemary

  • 1/2 Tsp. of cayenne pepper 

  • 2 Tsp. of coconut sugar

  • 2 Tsp. of sea salt

Directions

1. Preheat oven to 350°. 

2. Combine oil, cayenne pepper, coconut sugar, rosemary and salt in a bowl and mixed together.

3. Pour mixed nuts over a large cooking tray and spread them out evenly.

4. Pour oil and seasoning mixture over the nuts and toss together and spread the mixed nuts evenly over the cooking tray so that they are not touching each other.

5. Roast in the oven for 10 minutes.

6. Remove from the oven and let cool for five minutes.

7. Serve and enjoy!
