Cayenne-Spiced Jicama Fries

During these warm summer months my clients always want to know about a snack for that mid-afternoon slump. Yesterday I made cayenne-spiced jicama fries and they were a refreshing and filling combo of sweet and spice with a crunch.  

Jicama has numerous health benefits including a prebiotic fiber that feeds the good bacteria that live inside your gut. 

Also, even though jicama is a root vegetable it’s low in starch, sugar and carbs so it’s a great vegetable to help you lose weight. Finally, jicama has a high water content so it’s great to keep you hydrated during these warm summer months.

Ingredients

  •  1 small jicama thickly sliced into strips (2 cups)

  •  1 tb. olive oil

  •  1 tb. raw honey

  •  1/8  tsp. ground cayenne pepper

  •  ¼ teaspoon sea salt

  •  1 tb. lemon juice

Directions

  1. Peel jicama and slice julienne style either on a mandoline or by hand.

  2. In a bowl, combine and olive oil, honey,cayenne, salt and lemon juice.

  3. Add jicama slices and mix thoroughly to ensure all the slices are coated.

  4. Serve immediately or store in the refrigerator for 1 day.
