Cayenne-Spiced Jicama Fries

During these warm summer months my clients always want to know about a snack for that mid-afternoon slump. Yesterday I made cayenne-spiced jicama fries and they were a refreshing and filling combo of sweet and spice with a crunch.
Jicama has numerous health benefits including a prebiotic fiber that feeds the good bacteria that live inside your gut.
Also, even though jicama is a root vegetable it’s low in starch, sugar and carbs so it’s a great vegetable to help you lose weight. Finally, jicama has a high water content so it’s great to keep you hydrated during these warm summer months.

Ingredients
1 small jicama thickly sliced into strips (2 cups)
1 tb. olive oil
1 tb. raw honey
1/8 tsp. ground cayenne pepper
¼ teaspoon sea salt
1 tb. lemon juice
Directions
Peel jicama and slice julienne style either on a mandoline or by hand.
In a bowl, combine and olive oil, honey,cayenne, salt and lemon juice.
Add jicama slices and mix thoroughly to ensure all the slices are coated.
Serve immediately or store in the refrigerator for 1 day.
