Crispy Cauliflower with Tahini Dressing

Ingredients

  • Two heads of Cauliflower (cut into florets)

  • 1/2 cup chopped onions

  • 2 Tb. garlic paste or 3 cloves of minced garlic

  • 1/4 cup slivered almonds

  • 4 Tb. Olive Oil

  • 1 Tb. coconut aminos

  • 1 Tb. Lemon juice

  • 1/8 Tsp. Tumeric

  • 3 Tb. Tahini sauce (See recipe)

Directions

  1. Preheat the oven to 375 degrees.

  2. In a medium saucepan, saute onions and garlic with 2 Tb. of olive oil until caramelized, or about 10 minutes. 

  3. Put the onion/garlic mixture in a bowl and combine with 2 more Tb. of olive oil, coconut aminos, lemon juice  and tumeric and whisk together.

  4. Place the cauliflower in a large baking sheet and pour sauce over until the cauliflower fully coated. 

  5. Place in the oven for about 30 minutes, or until the cauliflower has started to slightly brown. 

  6. Take out of the oven and place on a serving platter. 

  7. Toss almond slivers evenly over the dish.

  8. Pour tahini dressing over the cauliflower. 

  9. Garnish with chopped parsley if desired, and serve!
