Annie's Anti-Aging Salad

Ingredients

  • 1 cup of spinach (chopped)

  • 1 cup of cucumbers (chopped)

  • 1 cup of beets (chopped)

  • 1/2 cup of shredded carrots

  • 1/4 cup of walnuts

  • 1/4 cup roasted garbanzo beans (I used the ones from Saffron Road)

  • 1/2 medium avocado

Directions

  1. Chop spinach, cucumbers, beets and place in a large bowl.

  2. Add shredded carrots, garbanzo beans and avocado.

  3. Toss with your favorite salad dressing (I used olive oil and apple cider vinegar). Serve and enjoy!
