Creamy Spiced Lentil and Quinoa Detox Salad

Ingredients

Lentils

  • 1 package (2 cups) of steamed lentils (I use the Trader Joe's ones)

  • 1 Tb. olive oil

  • 1 Tb. garlic paste 

  • 1 Tb. lemon juice

  • 1/8 tsp. of the following spices: tumeric, cumin, curry and and cardamon 

  • S+P to taste

Dressing

  • 1/2 cup water

  • 1/4 tahini

  • 1/4 cup nutritional yeast

  • 1 tsp. dijon mustard

  • 1 tsp. capers

  • 1 tsp. garlic paste

  • 1 tsp. coconut aminos

  • 1 tb. lemon juice

  • 1 tb. apple cider vinegar

Salad 

  • 4 cups of chopped romaine lettuce

  • 1/2 cup shredded carrots 

  • 1/2 chopped red cabbage

  • 1/2 cup cilantro

Directions

Lentils

  1. In a large bowl, break apart lentils with a fork.

  2. Add olive oil, lemon, garlic paste and seasonings and toss until fully coated. 

  3. Set aside.

Dressing

  1. Blend all dressing ingredients until you achieve a creamy consistency.

Salad

  1. Chop romaine hearts, cabbage and cilantro by hand. 

  2. Add quinoa. lentils and dressing and toss until fully coated.

  3. Serve and enjoy!
