Gluten Free Pasta Bolognese

Ingredients

  • 1- 16 ounce pack of organic ground beef or chicken

  • 2 Tb. of olive oil 

  • 3 cloves of garlic - minced

  • 1 Tb. of pesto of choice

  • 1 - 16 ounce pack of brown rice pasta 1/2 cup chopped onion

  • 1/2 cup of chopped basil

  • 1 - 24 ounce jar of marinara sauce (preferably low sodium)

  • Optional: 1/2 cup of riced or finely chopped broccoli 

Directions

For the Brown Rice Pasta

  1. Place 4 quarts of water in a large pot. Put the pot on the stove and bring the water to a boil.

  2. Pour 10-oz. — or one box — of brown-rice pasta into the boiling water.

  3. Add 1 tsp. salt and 1 tsp. oil to the water if you choose. The oil can help the pasta from sticking together. Alternately, stir the pasta while it is cooking to prevent it from sticking

  4. Cook the pasta for 10 minutes in boiling water.

  5. Remove the pasta from heat after 10 minutes. Drain the pasta in a strainer and rinse with cold water for 30 to 60 seconds.

For the Bolognese: 

  1. In a large pan, add olive oil and ground beef or chicken and cook through until mostly brown. (Optional: To reduce fat content, drain all liquid and return to stovetop.)

  2. Keeping the stove on a medium fire, add onions, basil and garlic (and riced broccoli, if desired) and stir allowing them to brown, for about 2-3 minutes.

  3. Add marinara and pesto and let simmer for 10 minutes for the flavors to come together and serve!
