Grilled Chicken Arugula Salad

Ingredients

Salad

  • 4 cups of Baby Arugula

  • 2 Grilled Chicken Breasts - Chopped

  • 1/2 cup Blackberries, halved

  • 1 Avocado, chopped

  • 1/2 cup Macadamia Nuts

  • 1 cup of Quinoa

Dressing

  • 1/8 cup Olive Oil

  • 1 Tb Apple Cider Vinegar

  • 1 Tb Lemon Juice

  • 1 Tb Maple Syrup or Liquid Stevia

  • Salt and Pepper to taste

Directions

  1. In a large bowl, toss all the salad ingredients together. 

  2. In a small bowl, whisk all the dressing ingredients together.

  3. Pour dressing over salad, toss and serve!
