Hearty Bean and Vegetable Soup

Ingredients

  • 1 can of cannellini beans

  • 2 tb. olive oil

  • 1/2 cooked brown rice (I use the one from seeds of change)

  • 1/2 cup of each of the following: chopped onions, celery and carrots

  • 1 cup of cilantro

  • 1 tb. garlic paste

  • 5 tomatoes

  • 2 cups of water

  • 1/2 tsp. of the following seasonings: cumin, tumeric, paprika

  • salt and pepper to taste

  • Optional: For extra protein, I add a tin of skinless and boneless sardines from the King Oscar brand

Directions

  1. In a large pot, on  medium heat saute onions, celery and carrots with olive oil and garlic paste until soft (about 5 minutes)

  2. Add beans, cilantro and seasonings. (and sardines if desired)  

  3. In a blender, add 1/2 a cup of water and tomatoes. Blend on high until fully pureed. Add to soup.

  4. Add 2 cups of water. 

  5. Bring to a boil and then let simmer for about 20-25 minutes. 

  6. Add rice. 

  7. Add salt and pepper to taste.

  8. Serve and enjoy!
