Ingredients

  • 1 eggplant, chopped

  • 4 zucchini, chopped

  • 1 tomato, chopped

  • 1 bell pepper

  • 1 onion, chopped

  • 3-4 cloves of garlic, minced

  • 1 tsp of the following: cumin, tumeric and paprika

  • 1 tb. lemon juice 

  • 1 tb. brown sugar or honey

  • 2 tb. tomato paste

  • 1/2 cup water

  • 1/4 olive oil

  • salt and pepper to taste

Directions

  1. In a large pot, on medium heat, combine onions, garlic, eggplant, peppers and zucchini.

  2. Cook down until vegetables are soft, roughly 10 minutes.

  3. Add tomatoes, tomato paste, and water and cook through on low heat for about 30 minutes, stirring occasionally. 

  4. Add seasonings, lemon juice and sugar or honey.

  5. Stir all ingredients together and serve!

Notes

  1. A tube of tomato paste allows you to use the necessary amount (2 tb.) and save the rest for another time!

  2. If you don't feel like chopping up the garlic feel free to substitute with 2 tbs. of garlic paste.
