Southwestern Black Bean Burger

Ingredients

  • 1/2 cup cooked quinoa

  • 1 - 15 ounce can black beans

  • 1/4 minced red onion

  • 1/4 cup chopped cilantro 

  • 1/4 cup chopped red pepper

  • 1/4 cup corn kernels

  • 3 cloves garlic, minced 

  • 1/2 cup gluten free oats 

  • 1/4 tsp. of the following seasonings: cumin, garlicpowder, paprika, chili powder, salt and pepper 

  • 1 large egg or ¼ cup egg substitute like Just Egg

  • 1 tb. avocado oil

  • 1 tb. lemon juice 

Directions

  1. Drain and rinse your black beans and finely chop or mince your veggies.

  2. In a large bowl, fork mash your black beans until almost paste-like, leaving a few chunks and some whole black beans for texture.

  3. Process oats in a food processor until they resemble an oat flour. This step is optional (you can totally use whole oats) but the burgers hold together better with oat flour.

  4. Combine all the ingredients in a large bowl and mix together until evenly distributed.

  5. Divide mixture into four portions and roll into balls.

  6. To shape your burgers, cup each ball in your hands and squeeze tightly, rotating as you gently, but firmly, press it into a disc using your thumb. 

  7. Pour 2 tablespoons of avocado oil in a skillet and heat to medium-high.

  8. Add the 4 burgers to the pan and cook for about 5 minutes on each side until you're left with a golden crust and a warm center.

  9. Serve over a bed of arugula, tomatoes, avocado and your favorite dressing or in a bun with all the fixings.
