Southwestern Chicken Sausage Bowl with Avocado Cilantro Dressing

For the recipe you need to purchase the following items:
Fully Cooked Chicken Sausage (I used Applegate's Feta & Spinach)
Jar of fresh salsa (I used the one from Lucky Habanero)
Optional: Microwavable Brown Rice (I used Seeds of Change Quinoa and Brown Rice)

Ingredients
For the Dressing:
2 avocados
1 bunch of cilantro
2/3 cup of water
1/4 cup olive oil
2 cloves of garlic, peeled
salt and pepper to taste
For the Bowl:
4 chicken sausages (I used Applegate's Feta & Spinach)
1 Jar of fresh salsa (I used the one from Lucky Habanero)
1 cup Brown Rice (I used Seeds of Change Quinoa and Brown Rice)
1 head of red lettuce, chopped
Directions
For the Dressing:
Combine all the ingredients (starting with the oil and water on the bottom) in a blender and blend on high until smooth.
For the Bowl, use a large salad bowl and layer as follows:
Lettuce
rice
salsa
chicken sausage
Drizzle 4 tablespoons of avocado cilantro dressing over the bowl, toss and serve!
