Southwestern Chicken Sausage Bowl with Avocado Cilantro Dressing

For the recipe you need to purchase the following items:

  1. Fully Cooked Chicken Sausage (I used Applegate's Feta & Spinach)

  2. Jar of fresh salsa (I used the one from Lucky Habanero)

  3. Optional: Microwavable Brown Rice (I used Seeds of Change Quinoa and Brown Rice)

Ingredients

For the Dressing:

  • 2 avocados

  • 1 bunch of cilantro 

  • 2/3 cup of water

  • 1/4 cup olive oil

  • 2 cloves of garlic, peeled

  • salt and pepper to taste

For the Bowl:

  • 4 chicken sausages (I used Applegate's Feta & Spinach)

  • 1 Jar of fresh salsa (I used the one from Lucky Habanero)

  • 1 cup Brown Rice (I used Seeds of Change Quinoa and Brown Rice)

  • 1 head of red lettuce, chopped

Directions

For the Dressing:

Combine all the ingredients (starting with the oil and water on the bottom) in a blender and blend on high until smooth. 

For the Bowl, use a large salad bowl and layer as follows: 

  1. Lettuce

  2. rice 

  3. salsa 

  4. chicken sausage 

Drizzle 4 tablespoons of avocado cilantro dressing over the bowl, toss and serve!
