Vegan Parmesan Zucchini

Ingredients

  • 5 Zucchinis - coarsely chopped

  • 2 Tb. Vegan Parmesan (I used the from Parma )

  • 2 Tb. olive oil

  • 1 Tb. lemon juice

  • 2 cloves garlic - minced

  • salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees.

  2. In a large glass baking tray, toss together zucchini, olive oil, garlic, vegan parmesan, lemon juice and salt and pepper until the zucchini is fully coated. 

  3. Bake for about 15 minutes, until tender.

  4. Serve and enjoy!
